Arugula, Apple, Manchego and Almond Salad (Once Upon a Chef ) ~ Swap out the arugula for mesclun, or upgrade the almonds to Spanish marconas ... this salad is always amazing.
Roasted Vegetable Torte (Ina Garten) ~ Roasted vegetables, seasoned and presented beautifully, topped off with goat cheese and a sprinkling of fresh rosemary.
Easy Baked Virginia Ham (Ina Garten) ~ The base of this incredibly easy marinade is mango chutney (typically found in the Indian section of your supermarket). Make this marinade in advance and use it on ham steaks or pork for a fast weeknight dinner.
All-American Berry Trifle ~ This pretty, light dessert is a taste of spring. While any storebought angel food will do, purchase one from Lydia Mae's bakery in Lancaster County Farmer's Market, where they offer plain, lemon, raspberry, and chocolate chip. Or, try a new flavor of pudding. (Note: Just tried chocolate, but vanilla is the reigning champ.)
